Back in 2017, together with his friends Marc \u2014 who had taken roasting classes in Vermont \u2014 and Josh, whose brother already ran a company called Escape Coffee in New Zealand, he started roasting in the evenings on a one-kilo machine set up in a kitchen. The first bags went out in mason jars through social media. The catalyst was a refusal: while consulting on the coffee programme of a downtown hotel, Boucher asked the incumbent roaster for better beans and eco-friendly packaging, and was told no. The three of them launched their own roastery instead.<\/p>\n<p>The company&#8217;s hierarchy of values is stated bluntly and in this order: planet, people, profit. Boucher puts it like this \u2014 if there is no planet there are no people, and if there are no people there is no profit; the reversed order is precisely what he held against the corporate world he left. In practice that means carbon-neutral certification for the company and its products, a push toward B Corp certification, PLA-lined paper bags built to compost, and electric deliveries across the island.
