serious share of this company&#8217;s volume never passes through the room at all.<\/li>\n<\/ul>\n<h2><span class=\"ez-toc-section\" id=\"Whats_in_the_cup\"><\/span>What&#8217;s in the cup<span class=\"ez-toc-section-end\"><\/span><\/h2>\n<p>This is where Structure parts company with most downtown caf\u00e9s: the team buys its own green coffee and roasts it itself. The founders travel to meet producers and try to trade with them directly \u2014 the first serious sourcing came out of a trip to Colombia. The language they use about buying is not the language of volume but of duration: build relationships that last, so that profitability stays bearable at both ends of the chain. That is an easy position to advertise and a hard one to hold, and the honest test of it is simply whether the same names keep coming back season after season.<\/p>\n<p>On espresso, two blends carry the bar. Fondation and 1852 are both assembled from Brazilian and Colombian coffees, which means a profile of sweetness, body and cocoa rather than sharp acidity \u2014 exactly what an espresso needs when half of it will end up in milk. A latte or a cortado built on that base does not vanish under the foam, and that is precisely why a house blend exists instead of a single origin forced under pressure.<\/p>\n<p>Next to it, the single-origin list plays the opposite card, the one about terroir. African lots \u2014 Burundi above all \u2014 and Colombian micro-lots labelled with the grower&#8217;s name are sold as whole beans and turn up on filter. The distinction the company draws is clean and honest: the blends are made for espresso and for milk, the filter coffees are made to reach the fine aromatics of a particular place. If you want to understand what this team can actually do, look at the filter side of the menu board, not at the cappuccino.<\/p>\n<p>A word about where all of it is roasted, because the arrangement is unusual. Having started out renting machine time from a fellow Montreal roaster, Structure moved production to the Montreal Roasting Society, a shared roasting facility set up by Scott Rao and Andy Kyres, fitted with two Probats \u2014 a 25-kilo and a 50-kilo. Which is to say the beans are not roasted in the room where you drink them, and there is no drum to look for behind the counter. In exchange, a small company gets access to equipment and to technical neighbours it could never have afforded alone, which is one of the smarter arrangements on the local coffee scene.<\/p>\n<h2><span class=\"ez-toc-section\" id=\"Whos_behind_it\"><\/span>Who&#8217;s behind it<span class=\"ez-toc-section-end\"><\/span><\/h2>\n<p>Three partners with three biographies that have almost nothing in common. J\u00e9r\u00f4me Grenier-Desbiens, a chemist by training and a certified Q grader, is the head roaster and green buyer; he is also one of the people behind East Coast Coffee Madness, the largest coffee gathering in the east of the country. Mathieu Carrier came back from Vancouver, where he had run the Kitsilano location of one of the best-known western roasters and worked alongside producer co-operatives. The two found each other again in Montreal in 2017, and the whole thing started there.<\/p>\n<p>The third partner, Marco Dieckmann, joined while the caf\u00e9 was being developed. Berlin-born, he left finance for the circus and worked at Cirque du Soleil before landing in coffee \u2014 a r\u00e9sum\u00e9 that by rights has no business inside a roastery, and which is exactly why the house has the tone it does. Carrier sums up the service philosophy in one plain sentence: respect the customer, acknowledge what they need, help them get the best. That is not teaching from above, and you can feel it at the counter: they will talk you through the lot if you ask, and they will not lecture you for ordering a latte.<\/p>\n<h2><span class=\"ez-toc-section\" id=\"What_kind_of_visit_it_suits\"><\/span>What kind of visit it suits<span class=\"ez-toc-section-end\"><\/span><\/h2>\n<p>The most natural use of this place is coffee to take away. The room sits in the middle of a district of offices, agencies and firms, and most of the service happens in a few minutes: in, ordered, out with a cup and very often with a bag of beans under one arm. The central island in the middle of the room is designed for precisely that \u2014 it moves people around rather than lining them up along a wall.<\/p>\n<p>Laptops are a more complicated answer, and it is worth being straight about it: the company states no public policy on working in the room, permissive or otherwise. What can be said follows from the geometry \u2014 this is a small half-basement, seating is limited, and a room this size in a business district fills up fast in the middle of the day. Anyone planning to sit for two hours with a computer should aim at the lulls and should not occupy the largest table. If your working day depends on a guaranteed socket and a quiet corner, keep a fallback in mind nearby.<\/p>\n<p>For a conversation between two people it works well outside the peaks: the noise comes from the machines and from the talking, not from music pushed too loud, and because the room is set below the pavement you are not competing with traffic. And coming alone is close to ideal \u2014 a single origin on filter, a notebook or a book, and a counter where you can ask about today&#8217;s lot without feeling like a nuisance. It is the kind of address where coffee on your own is an activity in itself rather than a gap between errands.<\/p>\n<h2><span class=\"ez-toc-section\" id=\"Space_and_atmosphere\"><\/span>Space and atmosphere<span class=\"ez-toc-section-end\"><\/span><\/h2>\n<p>The building is a classic Old Montreal greystone; you come in through glass doors and step down into a half-basement. The fit-out runs on white and on carefully measured artificial light, over an industrial base with a few mid-century touches \u2014 pale wood, simple lines, nothing overloaded. Wall shelving displays bags of beans, brewing gear and house products, a constant reminder that you are standing in a roaster&#8217;s shop as much as in a caf\u00e9.<\/p>\n<p>It is a small room rather than a broad coffee lounge: a meeting of six cannot be seated here, and at peak the movement of people overrides the calm. In return the acoustics stay reasonable and your eye keeps being pulled back to the counter and to what is happening on it. The half-basement has one obvious flaw \u2014 daylight is in short supply \u2014 and one genuine advantage: the noise of the district stays outside, which counts for a lot in this particular quarter.<\/p>\n<h2><span class=\"ez-toc-section\" id=\"What_goes_with_the_coffee\"><\/span>What goes with the coffee<span class=\"ez-toc-section-end\"><\/span><\/h2>\n<p>Structure does not bake, and it is better to know that going in. Pastries and viennoiserie come from outside, notably from Automne Boulangerie and from the pastry chef Dave Plant, two names Montrealers know well. The logic is a roaster&#8217;s logic and a consistent one: do one thing seriously and buy the rest from people who do that thing seriously. There is no kitchen, no brunch and no table service \u2014 this is not an address for a meal, and it makes no claim to be.<\/p>\n<p>What the house does enjoy is pushing its own coffee outside the cup. There has been a coffee caramel developed with local confectioners and a beer brewed with a microbrewery in the Eastern Townships. These are not window dressing but the logical collaborations of a small company curious about how far its beans can travel, and they describe the way the team works rather neatly: through relationships, not through a catalogue.<\/p>\n<h2><span class=\"ez-toc-section\" id=\"When_to_come\"><\/span>When to come<span class=\"ez-toc-section-end\"><\/span><\/h2>\n<p>The rhythm here is an office rhythm. They open early to catch people before the working day starts, fill up noticeably in the middle of the morning and again around the lunch hour, and ease off through the afternoon. On weekdays, if you want to talk at the counter, taste a filter properly or sit for longer than twenty minutes, those lulls are what you should be aiming at.<\/p>\n<p>At the weekend Old Montreal changes population entirely: fewer suits, far more people out walking. Caf\u00e9s in a business district do not run at the same tempo on Saturday as on Tuesday, and some ease back \u2014 so glance at the opening-times block on this same card before crossing town for it. In winter, the advantage of a half-basement becomes obvious the moment the door shuts behind you.<\/p>\n<h2><span class=\"ez-toc-section\" id=\"Getting_there\"><\/span>Getting there<span class=\"ez-toc-section-end\"><\/span><\/h2>\n<p>This is Old Montreal, its western edge, on the seam between the historic quarter and the international business district. The nearest metro is Square-Victoria\u2013OACI, a few minutes on foot; Place-d&#8217;Armes also works if you are coming from the east. On foot it is a short walk from the Old Port, from the convention centre or from the lower end of downtown. By car it is Old Montreal in all its glory: street parking is a lottery and the underground garages of the quarter are the only realistic answer. The downtown cycle routes run close by, and from May to October a bike is probably the simplest way to arrive.<\/p>\n<h2><span class=\"ez-toc-section\" id=\"Good_to_know\"><\/span>Good to know<span class=\"ez-toc-section-end\"><\/span><\/h2>\n<p>Three things worth keeping in mind. First, no roasting happens on site: this is a counter and a shop, not an open workshop, and anyone hoping to watch a drum turn is looking at the wrong address. Second, the room is small and set below street level; anyone dreaming of tall windows and a banquette for the whole afternoon will be happier in another neighbourhood. Third, the address lives on the rhythm of the business district, which produces very sharp peaks and very quiet troughs within the same day \u2014 arrive at the wrong moment and you get an entirely different experience.<\/p>\n<p>The strength, on the other hand, is a rare one. Very few downtown caf\u00e9s sell beans they bought from the producer themselves and roasted themselves. Leaving with a bag is the logical continuation of the visit rather than an impulse purchase, and if the coffee lands, the house subscription or the workplace offer carries the relationship well beyond the counter. For a visitor it is also one of the few places in Old Montreal where coffee is discussed without tourist folklore attached.<\/p>\n<h2><span class=\"ez-toc-section\" id=\"Questions_and_answers\"><\/span>Questions and answers<span class=\"ez-toc-section-end\"><\/span><\/h2>\n<p><strong>Does Structure really roast its own coffee?<\/strong><\/p>\n<p>Yes. The team buys green coffee directly from producers and roasts it themselves. The roasting itself, however, takes place in a shared roasting facility elsewhere in Montreal, not in the Old Montreal room.<\/p>\n<p><strong>What is the difference between Fondation and 1852?<\/strong><\/p>\n<p>They are the two house espresso blends, both built on Brazilian and Colombian coffees. They differ in balance and in exact composition, which shifts with each harvest; ask at the counter which one is running and how it behaves in milk.<\/p>\n<p><strong>Is there filter coffee, or only espresso?<\/strong><\/p>\n<p>There is filter, and it is where the real point of this address lies: it is the format reserved for single origins and micro-lots, where the sourcing work becomes audible in the cup.<\/p>\n<p><strong>Can you work here on a laptop?<\/strong><\/p>\n<p>The company has never stated a public policy either way. The room is small and runs on a business-district rhythm: workable in the lulls, much less so at peak. For a long working session, look for somewhere built for it.<\/p>\n<p><strong>Do they bake their own pastries?<\/strong><\/p>\n<p>No, and that is deliberate. Viennoiserie and desserts arrive from well-regarded Montreal bakers and pastry chefs. There is no kitchen and no proper food menu.<\/p>\n<p><strong>Can you buy beans to take home?<\/strong><\/p>\n<p>Yes \u2014 it is one of the reasons the place exists. Beyond counter sales there is a subscription delivered to your door and a separate programme aimed at offices.<\/p>\n<p><strong>Is it a good place for a group?<\/strong><\/p>\n<p>No. It is a small half-basement designed around movement; four people can make it work, six or eight will be in everybody&#8217;s way. For a group, look for something larger in the quarter.<\/p>\n<p><strong>Do you need to book?<\/strong><\/p>\n<p>No. It is a caf\u00e9, first come first served. At peak the queue moves quickly because a large share of the orders are leaving with the customer.<\/p>\n<p><strong>How do you get there without a car?<\/strong><\/p>\n<p>Metro to Square-Victoria\u2013OACI, then a few minutes on foot.
